Did you know that cold storage of produce reduces Vitamin C content?

The brain uses 100 times more Vitamin C than the rest of the body, so getting enough of this important micronutrient is essential for brain health. Most produce in the grocery store is stored from weeks to months (an apple may be 12 months old), reducing the nutritional content of many vitamins.

So, think about planting a little herb garden, Aero-garden or shopping at farmer’s markets for local, seasonal produce to get the highest nutrient density in what you eat.
